Chez Christophe is a chocolaterie and patisserie with 2 locations, one in Burnaby, B.C. and one in White Rock, B.C. Since opening their doors, Christophe (owner) has been serving both classic Swiss desserts and pastries along with his modern twists using fresh and local flavours. Their collection includes freshly baked pastries and cakes and handcrafted artisan chocolates. Customers can also find an array of macarons, signature chocolate bars and other confections along with a full coffee bar and sandwich menu. Christophe Bonzon is a Swiss trained Pastry Chef/Chocolatier. His resumé has almost two decades of hard work, studying under some of Europe's grand masters in the fine art of pastry and chocolate, both in his native Switzerland, Australia and in France. Christophe was recently honoured to become an official Cacao Barry Ambassador and looks forward to collaborating with other pastry chefs and chocolatiers. Christophe’s creations have travelled the world and was bestowed with Gold at the 2014 International Chocolate Awards World Final (London UK) in the White Chocolate Ganache and Truffle category. The success continued as Christophe participated at the 2015 World Chocolate Masters Canadian Final and won four awards. Bonzon was then nominated amongst the top five finalists at the 2015 BC Small Business Awards in the category of New Immigrant Entrepreneur. He received two finalist nominations at the Burnaby Business Excellence Awards in the category of “Business Person of the Year” and “Entrepreneurial Spirit”.

What motivated you to start your business? Why are you passionate about what you do?

Christophe and his wife, Jess Bonzon moved to Burnaby Heights directly from Switzerland and chose to open their business in the area because the neighbourhood reminded them of their small Swiss town. The Heights area of Hastings Street features small artisanal family-run businesses which are diverse and easily accessible. “It reminds me of Switzerland,” says Christophe. “When you go to a small business, you know the owner and they know their customers”. The atmosphere at Chez Christophe continues to blend the small town feel and taste of Switzerland with the warm, friendly neighbourhood vibe that you will find in Burnaby Heights. The full collection of sweat treats are created from scratch in our kitchen using chocolate exclusively imported from Switzerland called Carma. As a Swiss trained “Confectioner” or in more familiar terms Pastry Chef/Chocolatier, Christophe’s art lies in the freedom of creativity and his passion for creating artistic sculptures with chocolate - the opportunities to transform are endless. Christophe discovered chocolate at the tender age of ten while helping his mother make chocolate truffles as a gift for Christmas. Since then, the passion for sweet food has never left him. After training under some of Europe’s best grand masters with a resumé studded with almost two decades full of intense apprenticeships and coursework in the fine art of pastry and chocolate, both in his native Switzerland and in France along with professional postings around the world.

Why do you deserve to win the Business Impact award?

At Chez Christophe we are always striving to be better by creating new products and keeping up with current trends in the industry. We believe in working with the community, for the community. In the past year, we have collaborated with multiple local businesses by using their ingredients to come up with exciting products for the community. For example, we have created a jam and Bonbons with Mainland Whisky, Barrique Restaurant and even local Vancouver based Foodie influencers to name a few. Additionally, as an ambassador and member of Cacao Barry, Christophe collaborates with other pastry chefs and chocolatiers to influence the world of pastry through innovation, artistry and technical expertise. With this appointment, Christophe Bonzon becomes one of only 14 Cacao Barry Ambassadors in Canada. The invitation-only club includes a global membership of more than 100 pastry chefs and chocolatiers from over 20 countries. Christophe prides himself and his business using high quality and local, seasonal ingredients in coming up with the products that he creates for the community to enjoy. This year, Chez Christophe has also taken a more active approach to help reduce food waste by joining “Too Good To Go”, a company that works to eliminate food waste. Since joining this mission to help create a better environment we have saved an equivalent of 71 meals and 177.5 kg of CO2e. This partnership also gives the community the opportunity to do their part in helping the environment by being able to get treats and goodies at a fraction of the cost. In addition, we do our best to be environmentally friendly in our kitchen with product production, as many of our recipes allow us to upcycle ingredients. We have been able to create many other products without worrying about unnecessary waste. Overall, we believe our business has and continues to make a positive impact in our community, with our ingredients, business practices and continuous innovation.

We are dedicated to using high quality and local, seasonal ingredients in our business to come up with products for the community to enjoy. We believe in working with the community, for the community. In the past year, we have collaborated with multiple local businesses by using their ingredients to come up with exciting products for the community. For example, we have created a jam and Bonbons with Mainland Whisky and Barrique to name a few. We have also worked on special collaborations to co-create products that the community has been excited about. For example, we have worked with Mijune Pak, a Vancouver based Top Chef Canada judge (featured on the Food Network) during the Holiday Season. Additionally, we recognize the diverse, multi-cultural city in which we reside. For example, in our most recent collaboration, we partnered with 3 Vancouver based Foodies who come from an Asian background to create a special product to celebrate Lunar New Year. We are also allies of the LGBTQIA+ community and have also collaborated with The FoodGays who at the time were promoting their new book and hosted a meet and greet at our Burnaby location. One of our biggest hit products that received an incredible amount of support from the community was our “Boba Cube” which had a 370% demand increase in comparison to our regular Croissant Cube. As a result, we created this product for a 2nd time for the community.
